PUMPKIN CREAM CHEESE MUFFINS
3 c. Flour
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. ground cloves
4 tsp. pumpkin pie spice (I didn't have any so I just beefed up the other spice amounts)
1 tsp. salt
1 tsp. baking soda
4 eggs
2 c. sugar
2 c. pumpkin
1 1/4 c. vegetable oil
Filling:
8 oz. cream cheese, softened
1 egg
1/3 c. sugar
1/8 tsp. salt
Mix sugar, eggs, pumpkin and oil well. Then add remaining ingredients (except for the filling ingregdients) and mix well.
Grease Muffin tins or line with paper cups and fill them half full.
Mix filling ingredients and place on top of each muffin. Bake 25 min., or until toothpick inserted in pumpkin part of muffin (avoid cream cheese) comes out clean.

Nope... haven't yet.. but I did make your "famous" cake mix cookies (chocolate with vanilla icing) and wow... they are a hit every time. Cake Mix's are on sale at Safeway for .49 cents. So couldn't resist! I thought of you the whole time.
